First prepare all the ingredients. Remember the egg whites should not be cold to whisk properly; take them out of the fridge at least an hour in advance. Whisk the egg whites to firm peaks. In a separate bowl, beat the yolks with the sugar to obtain a thick, creamy mixture. Add a little water and the mascarpone to the yolks and mix well. Finally fold in the whipped egg whites.

Leave to rest in the fridge before serving.
