To make the courgette rolls, first wash the courgettes and use a knife to cut 12 slices 2-3 mm thick. Grease and heat the grill, add the courgettes and cook for about 5 minutes. Then turn the slices over and cook the other side. Place the grilled courgettes on a tray and set aside. Place the Virgilio ricotta in a bowl and mash slightly using a fork. Season with salt, pepper and chopped chives.
Spread the courgette slices on a board and cover the entire surface with the creamy mix, then roll the slices up. Prepare a tomato sauce in a frying pan. When ready, add the courgette rolls and cook in the oven for 10 minutes so that the ricotta melts.
