Red peppers

Yellow peppers

Anchovy fillets in oil

Tomato passata

Today we're making a bright, colourful first course: penne with sweet peppers is as simple as it is appetising and flavourful, made with just a few delicious ingredients.
We begin by peeling and slicing the onion. Heat the oil in a large pan and add the drained anchovies and the onion, cooking with a little water until the onions are soft - this should take about 10 minutes. Wash the peppers, remove the stems and cut in half, removing the seeds and filaments; then cut the peppers in thin strips. When the onion is soft, add the peppers with a little water and cook gently for about 15 minutes, then add the tomato passata and a pinch of sugar to counteract the acidity. Flavour the sauce with fresh basil, stir well, cover and continue cooking for about 10 more minutes, stirring occasionally. Meanwhile, cook the pasta. When drained, add to the pan with the sauce, mixing well to combine the flavours. Your penne with sweet peppers are ready: serve hot, garnishing with basil leaves and grated Virgilio Grana Padano riserva.
